HIDEKAZU TOJO
Canada's first sushi chef, Hidekazu Tojo, is credited with
creating the California Roll in Vancouver during the early '70s
as a way to appeal to non-Japanese diners. Now a sushi menu
staple throughout North America, you can try the original at
