Dan Dan Noodles
According to Vancouver's
Heritage Asian Eatery, you
can't go wrong with noodles—
Chinese dan dan-style noodles
are the traditional choice, but
udon or fettuccine will work just
fine in this foolproof, reheatable
power lunch.
SAUCE INGREDIENTS
1 tbsp peanut butter (smooth
or crunchy)
1 tbsp white sugar
1 tsp light soy sauce
2 tsp sesame oil
½ tsp sesame paste (optional)
½ tsp black vinegar (optional)
½ tsp dark soy sauce (optional)
¼ tsp chicken, vegetable or
mushroom powder (optional)
10 oz boiling water
OTHER INGREDIENTS
8 oz cooked noodles
1 tbsp chopped green onion
1 tbsp crushed roasted peanuts
(lightly or non-salted)
½ tsp preserved Chinese radish
¼ tsp dried shrimp
1 tsp chili oil
Combine all of the sauce ingredients
into a bowl. Mix thoroughly, then add the
boiling water and mix again.
Add the cooked noodles (hot or cold) to
the bowl. Top with remaining ingredients
(you can also add a soft-boiled egg, pork,
fried tofu or whatever other extras you
might like) and serve.
