"The best rule of thumb is to simply ask the venue coordinator or manager to draw up a sample budget estimate based on the guest numbers in question and factoring in the most popular menus and bar plan for their venue, including taxes, gratuity and any rental fees that might be applicable," says McNally. "Taxes and gratuity alone add 22 per cent or more atop the food and alcohol and this can make a large overage if unaccounted for." In other words, it pays to do your homework.
